  • 1 clove Garlic minced
For the Dressing
  • 3 tablespoons Olive Oil or avocado oil
  • 0.5 cups Lemon Juice or lime juice
  • 1 tablespoon Gochugaru or red pepper flakes
  • 1 tablespoon Soy Sauce or tamari for gluten-free
  • 1 teaspoon Sugar or maple syrup

Method
 

Preparation Steps
  1. Wash and dry the cucumber and carrots. Cut the cucumber into bite-sized pieces and julienne the carrots.
  2. In a small bowl, whisk together the olive oil, lemon juice, gochugaru, soy sauce, and sugar.
  3. In a large bowl, combine the cucumber, carrots, parsley, and garlic. Toss to combine.
  4. Pour the dressing over the salad and toss gently.
  5. Sprinkle the sesame seeds over the salad and toss again.
  6. Let the salad rest for about 10 minutes at room temperature.
  7. Serve immediately, tossing lightly before serving.
