- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the dry ingredients: all-purpose flour, baking powder, salt, granulated sugar, brown sugar, cinnamon, nutmeg, and cloves. Whisk until well blended.
- In a separate bowl, combine the wet ingredients: applesauce, milk, melted butter, vanilla extract, and grated carrots. Mix thoroughly.
- Pour the wet mixture into the dry ingredients and gently fold them together until just combined. Transfer the batter into a greased 8-inch rectangular baking dish.
- In a small bowl, mix together the granulated sugar, brown sugar, and chopped walnuts. Sprinkle the topping evenly over the batter.
- Carefully pour the hot water over the entire mixture in the baking dish. Do not stir!
- Place your baking dish in the preheated oven and allow it to bake for 40–50 minutes or until the center is set.
- Once baked, let it cool for about 5–10 minutes before serving with cheesecake ice cream.
