Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or lightly grease each cup with cooking spray.
  3. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, mix together the oil, milk, eggs, vanilla extract, granulated sugar, and brown sugar until smooth.
  5. Gently fold the grated zucchini into the wet mixture until evenly distributed.
  6. Pour the wet mixture into the bowl with the dry ingredients and gently combine using a spatula.
  7. Fold in the semi-sweet chocolate chips.
  8. Fill each muffin cup about three-quarters full with the batter.
