For the Sauce
  • 2 tails Lobster fresh or thawed frozen
  • 4 tablespoons Butter for sauce richness
  • 1 cup Heavy Cream or half-and-half
  • 0.5 cup Lobster Broth or Chicken Broth, optional
  • 0.5 cup White Wine or Brandy, optional
  • 1 clove Shallot or Garlic, minced
  • 1 tablespoon Worcestershire Sauce to taste
  • 1 teaspoon Dijon Mustard for tang
  • 1 tablespoon Fresh Tarragon or substitute with parsley or thyme
  • 0.5 tablespoon Lemon Juice fresh
  • to taste Salt
  • to taste Pepper

Method
 

Making the Sauce
  1. Steam or boil the lobster for 5–7 minutes until shells are bright red.
  2. Remove the lobster tails, let cool, then chop the meat into bite-sized pieces.
  3. Melt the butter in a skillet over medium heat and sauté minced shallot or garlic for 2–3 minutes.
  4. Add heavy cream and lobster broth, simmer for 5–7 minutes until thick.
  5. Stir in Worcestershire sauce, mustard, salt, and pepper; simmer for an additional 2–3 minutes.
  6. Fold in the lobster meat and cook on low heat for another 2–3 minutes.
  7. Squeeze in lemon juice and garnish with tarragon before serving.
