  • 2 cups chocolate cookies Crushed
  • 1/2 cup unsalted butter Melted
Filling
  • 16 oz cream cheese Softened
  • 1 cup granulated sugar
  • 3 large eggs Room temperature
  • 1 cup sour cream
  • 1 tsp vanilla extract Pure
  • 8 oz dark chocolate 60-70% cocoa, melted
  • 1/2 cup raspberry jam
Ganache (Optional)
  • 1 cup heavy cream Or coconut cream for dairy-free

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. Crush chocolate cookies and mix with melted unsalted butter. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes until golden.
  4. In a mixing bowl, beat cream cheese and granulated sugar until creamy. Add eggs one at a time.
  5. Incorporate sour cream and vanilla extract.
  6. Melt dark chocolate and let cool slightly, then fold into the cream cheese mixture along with the raspberry jam.
  7. Pour the filling over the crust and bake for 60-70 minutes.
  8. Cool gradually in the oven with the door ajar.
  9. Optional: Prepare ganache by heating heavy cream and pouring over chopped chocolate.
  10. Serve with fresh raspberries on top.
