Preparation Steps
  1. In a mixing bowl, blend together the Greek yogurt, peanut butter, honey, and vanilla extract until the mixture is smooth and creamy.
  2. Gently fold in the mini chocolate chips, reserving a handful for topping later.
  3. Line a baking sheet with parchment paper. Portion the mixture onto the prepared baking sheet, flattening each mound into discs.
  4. Place the baking sheet in the freezer for 1-2 hours until the bites are firm.
  5. Melt the dark chocolate chips and coconut oil in a microwave-safe bowl until smooth.
  6. Dip each bite into the melted chocolate, ensuring they're fully coated.
  7. While the chocolate is still wet, sprinkle with your choice of crushed peanuts, sea salt flakes, or shredded coconut.
  8. Return the baking sheet to the freezer for another 15-20 minutes until the chocolate coating is completely set.
  9. Transfer the bites to an airtight container, layering with parchment paper. Store in the freezer for up to three weeks.
