- Preheat your oven to 350°F (175°C).
- In a medium skillet, heat a tablespoon of olive oil over medium heat. Then, add the diced onion and bell pepper, sautéing for 3-4 minutes. Add chopped spinach and cook for an additional 2-3 minutes until wilted. Season with garlic powder, salt, and pepper before removing from heat.
- In a large mixing bowl, whisk together eggs, milk, and cottage cheese until smooth. Stir in Italian seasoning and a pinch of salt and pepper. Fold in the cooled vegetable mixture and shredded cheddar cheese.
- Grease a 9-inch pie dish with olive oil and pour the filling in, spreading evenly. Bake in the preheated oven for 40-45 minutes until golden and a knife comes out clean.
