Salad

Preparation
  1. In a small bowl, combine rice vinegar, apple cider vinegar, low sodium soy sauce, sugar, honey, and sesame oil. Whisk vigorously for 1-2 minutes until sugar dissolves and mixture is smooth.
  2. In a large bowl, add sliced cucumbers and pre-shredded carrots. Toss in minced garlic, green onions, and parsley or cilantro. Mix gently for 2-3 minutes until well combined.
  3. Drizzle sesame oil over mixed vegetables and toss thoroughly for 1-2 minutes for even distribution.
  4. Pour prepared dressing over vegetables, stir gently for 1-2 minutes, and adjust seasoning as necessary.
  5. Transfer to a serving bowl, garnish with extra sesame seeds or peanuts, cover and refrigerate for 20-30 minutes.
  6. Serve chilled in a vibrant dish, inviting guests to enjoy this refreshing salad.
