Cooking Steps
- Heat a large skillet or wok over medium-high heat for about 2 minutes. Add 2 tablespoons of vegetable oil and heat for another minute.
- Add bite-sized pieces of chicken breast to the skillet in a single layer. Sauté for 5-7 minutes until golden brown and cooked through.
- If using, add chopped green onions to the skillet and sauté for 1-2 minutes.
- Add the sliced mushrooms to the skillet and cook for 4-5 minutes until golden and caramelized.
- Return the cooked chicken to the skillet with the mushrooms. Sprinkle black pepper, salt, garlic powder, and onion powder.
- In a small bowl, whisk together cornstarch with water until smooth. Add to the skillet with chicken broth and soy sauce. Stir for 2-3 minutes until sauce thickens.
- Remove from heat and serve the Black Pepper Chicken with Mushrooms hot over steamed rice or noodles.

Notes
Cut chicken into uniform pieces for even cooking. Avoid overcooking mushrooms for best texture. Adjust black pepper to your taste preference. When mixing cornstarch with water, ensure it's well done to avoid lumps.
