Ingredients
  

For the Bowl
  • 2 medium Sweet Potatoes Can substitute with butternut squash
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 pound Boneless Skinless Chicken Breast Can substitute with tempeh or chickpeas
  • 2 cups Cooked Rice Can use white or brown rice
  • 2 cups Green Vegetables E.g., spinach or broccoli; frozen can be used
For the Sauce
  • 1 cup Greek Yogurt Or mayonnaise; can substitute with sour cream
  • 2 tablespoons Lime Juice Can replace with lemon juice
  • 1 tablespoon Sriracha Adjust or omit to taste
  • 1 teaspoon Paprika Smoked paprika gives a different flavor
  • 1 teaspoon Garlic Powder Fresh garlic can also be used
  • 1 teaspoon Cumin Can swap with coriander
  • 1/4 teaspoon Cayenne Pepper Optional; adjust according to preference
For Seasoning
  • 1 teaspoon Onion Powder Can omit or substitute with fresh onions
  • 1/4 cup Fresh Cilantro or Parsley Can substitute with scallions

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cube the sweet potatoes and toss them with olive oil, half of the paprika, garlic powder, salt, and pepper. Spread on the baking sheet.
  3. Roast the sweet potatoes for 20-25 minutes, flipping halfway through until tender and caramelized.
  4. Season the chicken breast with remaining garlic powder, onion powder, salt, and pepper. Sauté in heated olive oil for 5-7 minutes until golden and cooked through.
  5. Whisk together Greek yogurt, lime juice, sriracha, cumin, and remaining paprika for the sauce. Adjust seasoning as needed.
  6. Assemble the bowls with a base of cooked rice, topped with roasted sweet potatoes, sautéed chicken, greens, and drizzled sauce.
