Preparation Steps
- Preheat your oven to 375°F (190°C).
- Spread uncooked long grain white rice evenly across the base of a 9x13 inch baking dish.
- Pour the chicken broth over the rice, ensuring it covers the rice completely.
- In a mixing bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and paprika. Mix well.
- Pat the boneless, skinless chicken breasts dry and drizzle with olive oil, then place them on top of the rice.
- Spread the tzatziki sauce generously over each chicken breast.
- Cover tightly with aluminum foil and bake for 50-60 minutes until chicken reaches 165°F (75°C).
- Remove from oven and let sit for 5 minutes covered before serving.
