For the Rice & Chicken
  • 1 cup Long Grain White Rice or jasmine or basmati rice
  • 2 cups Chicken Broth or water
  • 4 pieces Boneless, Skinless Chicken Breasts or skinless thighs
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
For the Tzatziki Sauce
  • 1 cup Greek Yogurt or dairy-free yogurt
  • 2 cloves Minced Garlic or garlic powder
  • 1/2 cup Grated Cucumber squeeze out excess moisture
  • 1 tablespoon Dill or dried dill
  • 1 tablespoon Lemon Juice or vinegar
  • 1 teaspoon Oregano or Italian seasoning
  • 1/2 teaspoon Paprika

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Spread uncooked long grain white rice evenly across the base of a 9x13 inch baking dish.
  3. Pour the chicken broth over the rice, ensuring it covers the rice completely.
  4. In a mixing bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and paprika. Mix well.
  5. Pat the boneless, skinless chicken breasts dry and drizzle with olive oil, then place them on top of the rice.
  6. Spread the tzatziki sauce generously over each chicken breast.
  7. Cover tightly with aluminum foil and bake for 50-60 minutes until chicken reaches 165°F (75°C).
  8. Remove from oven and let sit for 5 minutes covered before serving.
