Step-by-Step Instructions
  1. Preheat your oven to 325°F (165°C). Gather all ingredients and equipment.
  2. Cream together the softened butter and granulated sugar in a stand mixer until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract, mixing until well combined. Gradually incorporate flour and baking powder until the dough forms.
  3. Roll the cookie dough into 1-inch balls and place them on a prepared baking sheet. Press your thumb gently into the center of each ball to create an indentation.
  4. Spoon about 1/2 teaspoon of your chosen fruit jam into each indentation.
  5. Bake for 18-20 minutes, rotating the baking sheet halfway through. Look for lightly golden edges.
  6. Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack.
