  • 3 large Egg Yolks
  • 1 tablespoon Fresh Lemon Juice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Whisk together 8 large eggs, 2 cups of milk, 2 tablespoons of Dijon mustard, and a pinch of salt and black pepper.
  3. Layer toasted English muffins across the bottom of the greased dish, then sprinkle 8 ounces of diced Canadian bacon over them.
  4. Pour the egg mixture evenly over the muffins and bacon.
  5. Sprinkle 1 cup of shredded Swiss or cheddar cheese evenly over the top.
  6. Bake in the preheated oven for 40-45 minutes, watching for a golden brown top.
  7. Prepare hollandaise sauce by melting ½ cup of unsalted butter and whisking with 3 egg yolks and 1 tablespoon of lemon juice.
  8. Let the casserole rest for 10 minutes before serving with hollandaise sauce.
