Making the Crepes
- In a mixing bowl, combine the flour, sugar, and salt. Create a well and add the eggs. Whisk gently, then gradually incorporate the milk to achieve a smooth batter. Stir in the melted butter and let rest for at least 30 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it. Ensure the pan is hot enough when water sizzles upon contact.
- Pour about ¼ cup of batter into the center of the pan and swirl to create an even layer. Cook until the edges lift and the surface is set, about 1-2 minutes. Flip and cook the other side for 30 seconds to 1 minute.
- Transfer the cooked crepe to a plate and cover with a kitchen towel to keep warm. Repeat with remaining batter.
