Ingredients

Crepe Batter
  • 1 cup all-purpose flour provides structural integrity
  • 2 tablespoons sugar adds sweetness, adjust to taste
  • 1 pinch salt enhances flavor
  • 2 large eggs fresh for best results
  • 1.5 cups milk whole milk preferred
  • 2 tablespoons melted butter prevent sticking
Optional Enhancements
  • 1 teaspoon vanilla extract for sweet crepes
  • 1 tablespoon orange zest adds citrusy flavor

Equipment

  • Non-stick skillet
  • mixing bowl
  • whisk
  • spatula
  • ladle

Method

Making the Crepes
  1. In a mixing bowl, combine the flour, sugar, and salt. Create a well and add the eggs. Whisk gently, then gradually incorporate the milk to achieve a smooth batter. Stir in the melted butter and let rest for at least 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Ensure the pan is hot enough when water sizzles upon contact.
  3. Pour about ¼ cup of batter into the center of the pan and swirl to create an even layer. Cook until the edges lift and the surface is set, about 1-2 minutes. Flip and cook the other side for 30 seconds to 1 minute.
  4. Transfer the cooked crepe to a plate and cover with a kitchen towel to keep warm. Repeat with remaining batter.
