  • 0.75 tsp Garlic Powder Or use fresh garlic for stronger flavor.
  • 1 tbsp Extra Virgin Olive Oil Use high-quality olive oil for better flavor.
  • Salt To taste.
  • Black Pepper To taste.
For the Salad
  • 4 cups Shredded Chicken Preferably cooled.
  • 0.25 cup Red Onion, finely chopped Can substitute with green onion.
  • 0.25 cup Kalamata Olives, pitted Substitute with green olives if desired.
  • 4 oz Feta Cheese, crumbled Vegan feta is an option.
  • 2.5 tbsp Fresh Parsley, chopped Or use other fresh herbs.

Step-by-Step Instructions
  1. Begin by grating one cup of cucumber, then firmly squeezing it to remove excess moisture. In a medium bowl, mix together yogurt, squeezed cucumber, lemon juice, dill, garlic powder, and olive oil. Stir until smooth and let rest for a few minutes.
  2. In a large mixing bowl, combine shredded chicken, chopped red onion, kalamata olives, and crumbled feta cheese. Add chopped parsley for extra flavor and color.
  3. Pour the tzatziki dressing over the chicken mixture and gently fold the ingredients together until well coated. Be careful not to overmix.
  4. Taste the salad and adjust the seasoning with salt and pepper. Add more lemon juice if needed.
  5. Cover the bowl with plastic wrap or transfer to an airtight container. Chill in the refrigerator for at least 30 minutes before serving.
