  • 1/2 cup Frank's RedHot Sauce Adjust based on heat preference.
  • Spices (onion powder, garlic powder, etc.) Customize with your favorite spices.
For Topping
  • 1/2 cup Light Feta Cheese Can replace with regular feta or omit.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients.
  2. Blend cottage cheese until smooth and creamy in a blender or food processor.
  3. In a large bowl, combine shredded chicken, blended cottage cheese, Frank’s RedHot sauce, and spices. Mix well.
  4. Slice each zucchini in half lengthwise and scoop out the center to create boats.
  5. Fill the zucchini halves with the buffalo chicken filling, pressing down to pack it well.
  6. Place filled zucchinis on a parchment-lined baking sheet and bake for 20 minutes.
  7. Remove from oven, sprinkle light feta cheese over the tops, and return to oven for an additional 10 minutes.
  8. Garnish with chopped parsley and optional light ranch dressing before serving.
