  • 2 cups powdered sugar sift before adding for smooth texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a medium bowl and set aside.
  3. Cream softened butter, sugar, and honey together until light and fluffy.
  4. Add eggs one at a time and mix in vanilla extract.
  5. Gradually add the dry ingredients and milk, alternating between them, until just combined.
  6. Gently fold in finely diced peaches.
  7. Spoon batter into cupcake liners filling them two-thirds full and bake for 18-22 minutes.
  8. Cool cupcakes in the tin for 5 minutes before transferring to a wire rack.
Frosting
  1. Beat softened cream cheese and butter until smooth.
  2. Mix in honey and vanilla extract, followed by powdered sugar until creamy.
  3. Frost cooled cupcakes and garnish with peach slices and a drizzle of honey.
