Method
 

Step-by-Step Instructions
  1. Mix the ground beef or lamb with grated onion, chopped parsley, minced garlic, cumin, allspice, salt, pepper, and cayenne in a large mixing bowl.
  2. Wet your hands to form the mixture into patties that are approximately 4 inches long and 1 inch thick.
  3. Preheat a grill or skillet to medium-high heat, around 375°F (190°C); oil the grates or skillet lightly.
  4. Cook the kafta patties on each side for about 4-5 minutes, checking that the internal temperature reaches at least 160°F (70°C).
  5. Allow the patties to rest for a couple of minutes after cooking.
  6. Serve warm with pita or rice and a fresh cucumber-tomato salad.
