- Preheat your oven to 350°F (175°C) and grease a 1.5-quart baking dish.
- Bring a large pot of salted water to a boil, add the jumbo pasta shells, and cook for 8-9 minutes until al dente. Drain and rinse under cool water.
- In a mixing bowl, combine turkey, mashed potatoes, diced onion, diced celery, and minced garlic. Stir in half of the cheddar cheese, then season with salt and pepper.
- Spread 3/4 cup of gravy on the bottom of the baking dish. Fill each shell with the turkey mixture and place tightly side by side in the dish.
- Drizzle with remaining gravy, top with cheese and any leftover stuffing, and bake for 25-30 minutes until cheese is bubbly and golden.
- Allow to cool for a few minutes, then serve warm. Optionally garnish with parsley or green onions.
