  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons butter or cream cheese
For the Topping
  • 1 cup shredded cheddar cheese or mozzarella
  • fresh parsley optional garnish

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9x9-inch baking dish.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, beaten egg, and ketchup along with garlic powder, onion powder, salt, and pepper. Mix gently.
  3. Transfer the meat mixture into the prepared baking dish and bake for 20-25 minutes until firm and lightly browned.
  4. Warm leftover mashed potatoes and stir in sour cream and butter, then season with salt and pepper.
  5. Spread the creamy mashed potatoes over the baked meatloaf evenly.
  6. Sprinkle shredded cheddar cheese over the mashed potatoes and bake for 10-15 minutes until cheese is melted and bubbly.
  7. Allow the casserole to cool for 5-10 minutes, garnish with parsley, cut into squares, and serve.
