  • 1 teaspoon Chili powder Optional for heat.

For the Eggs
  • 6 large Eggs No substitutes recommended.
  • 1 tablespoon Milk Optional for creaminess.
  • 2 tablespoons Unsalted butter Or oil for cooking.
For the Assembly
  • 1 cup Shredded cheddar cheese Substitutes like Monterey Jack are fine.
  • 4 small Flour or corn tortillas Corn for gluten-free.

Method
 

Instructions
  1. Prepare Potatoes: Dice potatoes, heat oil in skillet, add potatoes, garlic powder, smoked paprika, chili powder, salt and pepper. Sauté for 10–12 minutes until crispy.
  2. Scramble Eggs: Whisk eggs and milk, heat butter in nonstick skillet, pour in egg mixture, stir gently until softly scrambled.
  3. Warm Tortillas: Heat tortillas in a dry skillet for 30 seconds each side or microwave in damp towel for 15–20 seconds.
  4. Assemble Tacos: Layer tortillas with potatoes, scrambled eggs, and cheese, adding desired toppings.
  5. Serve Immediately: Enjoy while warm, optionally with fruit or salsa.
