  • 1 cup Rice Jasmine or brown.
For the Sauce
  • 1/2 cup Mayonnaise
  • 2 tablespoons Sriracha Adjust to taste.

  • 1 cup Cucumbers Sliced.
  • 1 small Avocado Sliced.
  • 2 stalks Green Onions Chopped.
  • Optional Vegetables Such as bell peppers or snow peas.

Method
 

Step-by-Step Instructions
  1. Rinse the rice under cold water until clear. Combine with water in a saucepan, bring to a boil, reduce to low, cover and simmer for 15-20 minutes until fluffy.
  2. Heat a skillet over medium heat and add oil. Add thawed shrimp and cook for 3-4 minutes on each side until pink and opaque.
  3. In a mixing bowl, combine mayonnaise and sriracha until smooth. Adjust sriracha to taste.
  4. Spoon a layer of rice into bowls, top with sautéed shrimp and drizzle with spicy mayo.
  5. Garnish with cucumbers, avocado, and green onions, and add optional veggies. Serve warm.
