Ingredients
  

Chicken Marinade
  • 2 cups Chicken Breasts diced
  • 2 tablespoons Lime Juice fresh or bottled
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Onion Powder or fresh onion
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Salt adjust to taste
  • 1 tablespoon Olive Oil or avocado oil
  • 1 chipotle pepper Chipotle Pepper in Adobo adjust quantity to taste
Wrap
  • 4 large Tortillas whole grain preferred
  • 1 cup Uncooked Rice or quinoa for gluten-free
Filling
  • 1 cup Red Bell Pepper sliced
  • 1 small Red Onion sliced
  • 2 cloves Garlic minced
  • 1 cup Corn Kernels frozen or canned
  • 1 can Black Beans drained and rinsed
Toppings
  • 1/2 cup Cotija Cheese crumbled
  • 1/2 cup Sour Cream or Greek yogurt
  • 1 tablespoon Honey or maple syrup for vegan
  • 1/4 cup Fresh Cilantro chopped

Method
 

Preparation
  1. In a bowl, combine diced chicken with lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, and olive oil. Mix well and let sit for at least 15 minutes.
  2. Cook rice according to package directions, about 15-20 minutes.
  3. While rice cooks, prepare the vegetables: slice red bell pepper, jalapeño, and red onion; mince garlic. Blend together sour cream, honey, and cilantro until smooth for the sauce.
Cooking
  1. Heat a large skillet over medium heat, add marinated chicken, and cook for 12-15 minutes until fully cooked and browned. Remove from skillet.
  2. In the same skillet, add sliced vegetables and sauté for about 8 minutes. Add minced garlic for the last minute.
Assembly
  1. On a tortilla, layer cooked rice, sautéed chicken, vegetables, corn, black beans, and cotija cheese. Drizzle with sauce, then roll tightly. Repeat with remaining ingredients.
  2. Serve warm or store in airtight containers. Slice in half for easier handling.
