  • 1/2 teaspoon Chili Flakes adjust to taste
For the Peanut Sauce
  • 1/2 cup Creamy Peanut Butter
  • 2 tablespoons Honey maple syrup is an alternative
  • 1 tablespoon Rice Vinegar
  • 1 clove Minced Garlic
  • 1 teaspoon Fresh Ginger or substitute with ground
  • 1/4 cup Warm Water to adjust consistency
For the Slaw
  • 2 cups Cabbage shredded
  • 1 cup Carrots grated
  • 1 cup Red Bell Pepper diced
  • 2 tablespoons Scallions chopped
  • 1/4 cup Cilantro chopped
  • 1 tablespoon Lime Juice
  • 1 tablespoon Rice Vinegar for slaw
  • 1 teaspoon Sugar
For Assembling
  • 4 pieces Flour Tortillas or gluten-free options
  • 1/4 cup Chopped Peanuts for garnish

Step-by-Step Instructions
  1. Marinate Chicken: In a mixing bowl, whisk soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes. Add chicken thighs, coat well, cover, and refrigerate for at least 20 minutes.
  2. Prepare Peanut Sauce: Combine peanut butter, soy sauce, honey, rice vinegar, minced garlic, and fresh ginger in a bowl. Stir until smooth and adjust with warm water as needed.
  3. Make Slaw: Mix shredded cabbage, grated carrots, diced bell pepper, scallions, and cilantro in a bowl. Drizzle with lime juice, rice vinegar, sugar, and toss. Let sit for 10 minutes.
  4. Cook Chicken: Heat skillet over medium-high heat. Add oil, then marinated chicken thighs. Sear for 5-7 minutes on each side until cooked through.
  5. Assemble Wraps: Warm tortillas, spread peanut sauce, layer with slaw and sliced chicken, drizzle more peanut sauce, sprinkle with peanuts, fold tightly, and cut diagonally.
