Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss zucchini, red bell pepper, eggplant, and red onion with olive oil, dried oregano, sea salt, and black pepper.
  3. Spread the seasoned vegetables in a single layer on the baking sheet and roast for 18-20 minutes.
  4. While the vegetables are roasting, slice ciabatta rolls in half and toast until golden brown.
  5. Spread a layer of hummus on the bottom halves of each toasted roll.
  6. Distribute the roasted vegetables over the hummus layer, sprinkle with feta cheese and add fresh basil leaves.
  7. Drizzle balsamic glaze over the assembled sandwich before placing the top halves of the ciabatta rolls on.
  8. Slice the Veggie Hummus Sandwich in half and serve warm.
