Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare your 9x13-inch baking dish.
  2. Slice the yellow squash and zucchini into uniform 1/4-inch rounds.
  3. Sauté the sliced squash and zucchini in olive oil for about 5 minutes until slightly softened.
  4. Add chopped onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).
  5. Sprinkle in dried thyme and red pepper flakes, mixing well before removing from heat.
  6. Whisk together milk, shredded cheddar cheese, Parmesan cheese, and melted butter in a separate bowl until smooth.
  7. Transfer the sautéed vegetable mixture into the baking dish, pour cheese sauce over, and fold together.
  8. Sprinkle breadcrumbs and remaining Parmesan cheese over the top.
  9. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown on top.
