Method
 

Brining and Cooking Shrimp
  1. In a mixing bowl, combine shrimp with baking soda, kosher salt, and Old Bay seasoning. Let sit for 15-20 minutes.
  2. Prepare an ice bath by filling a large bowl with ice water.
  3. Bring 8 cups of water to a boil, adding lemon juice. Cook the brined shrimp for 90 seconds.
  4. Transfer shrimp to the ice bath immediately to halt cooking. Let them sit until chilled, then drain and pat dry.
Making the Salad
  1. In a large bowl, combine chopped celery, red onion, and dill. Stir in mayonnaise, Dijon mustard, celery seed, and lemon juice.
  2. Season with salt and pepper, mixing until combined.
  3. Fold the chilled shrimp into the dressing mixture gently, ensuring even coating.
  4. Cover the salad and refrigerate for at least 2 hours, preferably overnight.
  5. Serve cold, garnished as desired.
