  • 1 cup Feta Cheese Crumbled.
  • 1/4 cup Fresh Parsley Chopped, for garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Spread uncooked white rice evenly across the bottom of the greased baking dish.
  3. Pour the chicken broth over the rice, ensuring all grains are submerged.
  4. Evenly distribute the cooked chicken on top of the rice layer.
  5. Sprinkle diced cucumber, chopped red onion, halved grape tomatoes, and Kalamata olives over the chicken.
  6. Combine tzatziki sauce with garlic powder and oregano, then spread over the chicken and veggies.
  7. Sprinkle feta cheese over the top of the casserole.
  8. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake uncovered for an additional 10 minutes.
  10. Let it cool for a few minutes and sprinkle fresh chopped parsley on top before serving.
