Step-by-Step Instructions
  1. Heat 1 tablespoon of vegetable or coconut oil in a large skillet over medium heat.
  2. Add 1 pound of diced chicken breast to the skillet, season with salt and pepper, and sauté for 5-7 minutes.
  3. Stir in 2 minced garlic cloves and 1 teaspoon of grated ginger, sautéing for around 1 minute.
  4. Pour in 1 can of coconut milk, 1 tablespoon of soy sauce, and 1 teaspoon of lime juice; bring to a simmer for 5-7 minutes.
  5. Prepare 2 cups of cooked rice according to package instructions.
  6. Spoon the coconut chicken mixture over the warm rice.
  7. Garnish with freshly chopped cilantro or sliced green onions.
