Preparation
  1. Make the Dressing: Combine Greek yogurt, mayo, chili powder, garlic powder, salt, lime juice, and zest in a bowl. Stir until smooth.
  2. Cook Pasta: Boil salted water and add rotini. Cook for 8-10 minutes until al dente. Drain and let cool.
  3. Broil Corn: Toss corn with avocado oil and chili powder, spread on a baking sheet, and broil for 3-4 minutes until charred.
  4. Combine Ingredients: Mix cooled rotini, charred corn, shredded chicken, and dressing in a large bowl. Fold in Cotija cheese and cilantro.
  5. Serve: Transfer to a serving bowl, top with Cotija and cilantro, and serve with lime wedges.
