- Trim about 1 inch from the root of the enoki mushrooms and gently separate them into small bundles. Rinse them under cold water.
- Bring a large wok or pot of water to a rolling boil. Lower the enoki mushrooms into the boiling water in batches, cooking for about 1 minute.
- In a small saucepan, heat oil over medium heat until shimmering. Add minced garlic and sauté until fragrant.
- Add soy sauce, sugar, and chopped scallions to the saucepan, stirring well. Bring to a gentle boil.
- Pour the hot garlic and scallion sauce over the prepared enoki mushrooms and serve warm.
