Ingredients
  

For the Mushrooms
  • 200 grams Enoki Mushrooms Look for white, firm stems.
For the Sauce
  • 2 tablespoons Oil Any neutral oil like vegetable or canola.
  • 2 cloves Garlic Fresh garlic is recommended.
  • 2 tablespoons Light Soy Sauce Tamari or coconut aminos for gluten-free.
  • 1 teaspoon Sugar Balance saltiness; substitute with maple syrup for vegan.
  • 2 stalks Scallion (Green Onion) Chives or leeks can be used if needed.

Method
 

Preparation Instructions
  1. Trim about 1 inch from the root of the enoki mushrooms and gently separate them into small bundles. Rinse them under cold water.
  2. Bring a large wok or pot of water to a rolling boil. Lower the enoki mushrooms into the boiling water in batches, cooking for about 1 minute.
  3. In a small saucepan, heat oil over medium heat until shimmering. Add minced garlic and sauté until fragrant.
  4. Add soy sauce, sugar, and chopped scallions to the saucepan, stirring well. Bring to a gentle boil.
  5. Pour the hot garlic and scallion sauce over the prepared enoki mushrooms and serve warm.
