Marinate the Chicken
- Combine 3 tablespoons of olive oil, the juice of one lime, 2 minced garlic cloves, and 2 teaspoons of chipotle chili powder. Add 1 teaspoon of smoked paprika, 1 teaspoon of cumin, salt, and pepper. Marinate 1 pound of chicken, cover and refrigerate.
Cook the Chicken
- Preheat your grill or skillet over medium-high heat. Add marinated chicken and cook for 6-7 minutes on each side until cooked through.
Prepare Black Beans and Corn
- Warm 1 can of black beans with 1 teaspoon of cumin. Prepare 1 cup of corn by grilling or sautéing.
Make the Creamy Sauce
- Whisk together ½ cup of sour cream, the juice of another lime, 2 tablespoons of minced chipotle, ½ teaspoon of garlic powder, and 1 tablespoon of honey until smooth.
Assemble the Bowl
- Layer black beans, corn, sliced avocado, and sliced chicken in a bowl. Drizzle with the creamy sauce and garnish with cilantro.
