Ingredients
  

For the Chicken
  • 1 pound Boneless Skinless Chicken Breasts or Thighs Breasts are lean; thighs are juicier.
  • 3 tablespoons Olive Oil For marinating.
  • 1 tablespoon Lime Juice Juice of one lime.
  • 2 cloves Minced Garlic Infuses marinade.
  • 2 teaspoons Chipotle Chili Powder For smoky heat.
  • 1 teaspoon Smoked Paprika Enhances smokiness.
  • 1 teaspoon Cumin Complements flavors.
  • to taste Salt & Black Pepper Essential seasoning.
For the Bowl
  • 1 can Black Beans Warm and season with cumin.
  • 1 cup Corn Grilled or canned.
  • 1 Avocado Sliced fresh.
  • to taste Fresh Cilantro For garnish.
For the Creamy Sauce
  • ½ cup Sour Cream or Greek Yogurt Greek yogurt for a lighter option.
  • 2 tablespoons Minced Chipotle Peppers in Adobo For heat.
  • ½ teaspoon Garlic Powder Enhances sauce flavor.
  • 1 tablespoon Honey Balances spiciness.
  • 1 tablespoon Additional Lime Juice For acidity.

Method
 

Marinate the Chicken
  1. Combine 3 tablespoons of olive oil, the juice of one lime, 2 minced garlic cloves, and 2 teaspoons of chipotle chili powder. Add 1 teaspoon of smoked paprika, 1 teaspoon of cumin, salt, and pepper. Marinate 1 pound of chicken, cover and refrigerate.
Cook the Chicken
  1. Preheat your grill or skillet over medium-high heat. Add marinated chicken and cook for 6-7 minutes on each side until cooked through.
Prepare Black Beans and Corn
  1. Warm 1 can of black beans with 1 teaspoon of cumin. Prepare 1 cup of corn by grilling or sautéing.
Make the Creamy Sauce
  1. Whisk together ½ cup of sour cream, the juice of another lime, 2 tablespoons of minced chipotle, ½ teaspoon of garlic powder, and 1 tablespoon of honey until smooth.
Assemble the Bowl
  1. Layer black beans, corn, sliced avocado, and sliced chicken in a bowl. Drizzle with the creamy sauce and garnish with cilantro.
