- Preheat your oven to 200°C (400°F) and line a baking sheet with foil.
- In a medium skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened, about 3-5 minutes.
- In a large mixing bowl, combine cooled onion and garlic with ground chicken, breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix until just combined.
- Shape two-thirds of the mixture into a rectangle on the baking sheet. Place mozzarella in the center and cover with remaining mixture.
- Spread marinara sauce over the meatloaf.
- Bake for 45 minutes until golden and bubbly.
- Mix panko, Parmesan, butter, and parsley for topping. Add to meatloaf and bake an additional 15-20 minutes until golden brown.
- Let the meatloaf rest for 10 minutes before slicing.
