- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease each cup.
- In a large mixing bowl, combine pumpkin puree, eggs, almond butter, maple syrup, and vanilla extract until smooth and creamy.
- In a separate bowl, whisk together baking soda, pumpkin pie spice, and salt until evenly combined.
- Pour the dry ingredients into the wet mixture and gently fold until just combined, avoiding overmixing.
- If desired, fold in walnuts or pecans and/or chocolate chips until evenly distributed.
