  • 4 cups arugula fresh
  • 1 cup strawberries hulled and sliced
  • 1 cup feta cheese crumbled
  • 2 pieces green onions sliced, separated
  • 1/4 cup sliced almonds toasted
For the Vinaigrette
  • 1 tablespoon maple syrup can be substituted with honey
  • 1 tablespoon Dijon mustard for emulsification
  • 1 pinch garlic powder
  • to taste salt
  • to taste black pepper
  • 2 tablespoons balsamic vinegar quality brand recommended
  • 3 tablespoons olive oil extra virgin

Method
 

Preparation Steps
  1. Hull and slice about one cup of fresh strawberries. Place them on a paper towel to absorb excess moisture.
  2. Slice two green onions, separating the white parts for mixing and the green tops for garnish.
  3. Crumble the feta cheese into small pieces for even distribution.
  4. In a small bowl, whisk together Dijon mustard, maple syrup, garlic powder, salt, black pepper, and olive oil. Gradually drizzle in balsamic vinegar.
  5. In a large mixing bowl, place fresh arugula and drizzle half of the vinaigrette over it, gently tossing to coat.
  6. Add the sliced strawberries, crumbled feta, and most of the sliced green onions. Toss everything together gently.
  7. Serve immediately, garnishing with reserved green onion tops.
