- In a large mixing bowl, add the coleslaw mix, drained black beans, corn, diced red bell pepper, minced jalapeño, chopped green onions, and fresh cilantro. Mix gently with a wooden spoon until well combined.
- In a separate small bowl, whisk together the sour cream, mayonnaise, lime juice, and chipotle sauce until smooth and creamy. Adjust seasoning to taste.
- Pour the chipotle dressing over the mixed salad and toss gently with tongs until evenly coated.
- Just before serving, sprinkle the Chili Cheese Fritos over the top and mix gently to retain their crunch.
