For the Potatoes
  • 1.5 pounds Baby Potatoes Substitute with regular potatoes, cut into smaller pieces.
  • 0.5 cup Parmesan Cheese Can substitute with Pecorino Romano.
  • 1 teaspoon Smoked Paprika Omit if unavailable or substitute with regular paprika.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine Italian seasoning, smoked paprika, salt, black pepper, and olive oil. Whisk until well blended, then add the chicken and coat thoroughly.
  3. In another bowl, toss halved baby potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper until evenly coated.
  4. Line a baking sheet with parchment paper, place the seasoned chicken in the center, and surround with the coated baby potatoes.
  5. Bake for approximately 30 minutes until chicken reaches 165°F (74°C) and potatoes are tender and golden.
  6. Remove from oven, let rest for a few minutes, then sprinkle with fresh parsley before serving.
