Preparation Steps
- Prepare the spice rub by mixing onion powder, garlic powder, paprika, chili powder, cayenne pepper, salt, and black pepper in a bowl.
- Rub the spice mixture onto both sides of the chicken thighs and let sit for 15 minutes.
- Make the BBQ sauce by cooking diced peach and sugar in a saucepan over medium heat for 5 minutes. Stir in BBQ sauce and bourbon, then simmer for 10 minutes and blend until smooth.
- Preheat the grill to medium-high heat (375°F to 400°F) and oil the grates.
- Grill the chicken thighs for 3-5 minutes on each side, checking for an internal temperature of 165°F.
- Brush the bourbon peach BBQ sauce over the chicken and grill for an additional minute on each side.
- Slice additional fresh peaches in half, brush with leftover BBQ sauce, and grill for 1-2 minutes on each side.
- Serve the grilled chicken with the grilled peaches and extra BBQ sauce drizzled on top.
