Step‑by‑Step Instructions
  1. Start by cutting boneless, skinless chicken thighs into bite-sized pieces. In a large bowl, whisk together olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and black pepper. Add the chicken pieces, toss to coat thoroughly, and let them marinate in the refrigerator for at least 30 minutes.
  2. While the chicken marinates, make the creamy garlic sauce. In a small bowl, combine mayonnaise, Dijon mustard, minced garlic, and lemon juice or vinegar. Whisk until the mixture is smooth and creamy. Season with a pinch of salt. Cover the bowl and refrigerate the sauce until ready to serve.
  3. For an appealing presentation, thread the marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for about 30 minutes beforehand.
  4. Preheat your grill or grill pan to medium-high heat. Place the chicken bites or skewers on the grill and cook for 4-5 minutes on each side until golden brown and cooked through.
