Method
 

Marination and Cooking
  1. In a mixing bowl, combine olive oil, spices, and whisk until blended. Add chicken breasts, coat thoroughly, cover, and marinate in the refrigerator for at least 30 minutes.
  2. Preheat oven to 425°F (220°C). Dice sweet potatoes, drizzle with olive oil, season with salt and pepper, toss, spread on a baking sheet, and roast for 20–25 minutes.
  3. Preheat grill or grill pan to medium-high heat. Grill marinated chicken for 6–7 minutes on each side until the internal temperature reaches 165°F (74°C).
  4. In a small bowl, whisk together tahini, lemon juice, and water until smooth. Adjust thickness, then season with salt and pepper.
  5. Assemble the bowls starting with leafy greens, followed by sweet potatoes and sliced chicken. Top with avocado and drizzle with tahini dressing.
