Marination and Cooking
- In a mixing bowl, combine olive oil, spices, and whisk until blended. Add chicken breasts, coat thoroughly, cover, and marinate in the refrigerator for at least 30 minutes.
- Preheat oven to 425°F (220°C). Dice sweet potatoes, drizzle with olive oil, season with salt and pepper, toss, spread on a baking sheet, and roast for 20–25 minutes.
- Preheat grill or grill pan to medium-high heat. Grill marinated chicken for 6–7 minutes on each side until the internal temperature reaches 165°F (74°C).
- In a small bowl, whisk together tahini, lemon juice, and water until smooth. Adjust thickness, then season with salt and pepper.
- Assemble the bowls starting with leafy greens, followed by sweet potatoes and sliced chicken. Top with avocado and drizzle with tahini dressing.
