- In a medium bowl, mix together ketchup, sweet chilli sauce, crushed garlic, minced ginger, soy sauce, and salt until well combined.
- Cut the boneless, skinless chicken thighs into bite-sized pieces and place them in a separate bowl. Pour two-thirds of the marinade over the chicken and let it marinate for at least 30 minutes.
- If you're using bamboo skewers, soak them in boiling water for about 10 minutes to prevent burning on the grill.
- Once marinated, take the chicken pieces and thread them onto the soaked skewers, alternating with chunks of pineapple, slices of red onion, and vibrant bell peppers.
- Preheat your grill to a medium-high heat of around 400°F (200°C). Carefully place the skewers on the hot grill, cooking for 10 to 15 minutes, turning occasionally.
- Once grilled to perfection, remove the Hawaiian Chicken Skewers from the grill and allow them to rest for about 5 minutes before serving.
