  • 1/4 cup Sweet Chilli Sauce consider honey or agave syrup for a milder alternative.
  • 1/4 cup Soy Sauce tamari is a great gluten-free substitute.
  • 2 cloves Garlic (crushed) fresh is best, but jarred will suffice in a pinch.
  • 1 tablespoon Ginger (minced) ground ginger can replace fresh; just adjust the amount.
  • 1 teaspoon Salt sea salt or kosher salt are excellent choices.
For the Skewers
  • 1 pound Chicken Thighs (boneless, skinless) tender and flavorful, they’re the star of the show.
  • 1 cup Pineapple canned pineapple can work as a convenient substitute.
  • 1 cup Red Bell Peppers swap in green or yellow for variety.
  • 1 medium Red Onion feel free to replace with white onion or shallots for a different flavor.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, mix together ketchup, sweet chilli sauce, crushed garlic, minced ginger, soy sauce, and salt until well combined.
  2. Cut the boneless, skinless chicken thighs into bite-sized pieces and place them in a separate bowl. Pour two-thirds of the marinade over the chicken and let it marinate for at least 30 minutes.
  3. If you're using bamboo skewers, soak them in boiling water for about 10 minutes to prevent burning on the grill.
  4. Once marinated, take the chicken pieces and thread them onto the soaked skewers, alternating with chunks of pineapple, slices of red onion, and vibrant bell peppers.
  5. Preheat your grill to a medium-high heat of around 400°F (200°C). Carefully place the skewers on the hot grill, cooking for 10 to 15 minutes, turning occasionally.
  6. Once grilled to perfection, remove the Hawaiian Chicken Skewers from the grill and allow them to rest for about 5 minutes before serving.
