  • 4 Nectarines Substitute with peaches if not in season
  • 8 oz Burrata Cheese Mozzarella can be used for a firmer option
  • 4 slices Prosciutto Omit for a vegetarian version
  • 1 cup Cherry Tomatoes Any seasonal tomato can be substituted
  • 1 cup Heirloom Tomatoes Standard tomatoes are a good backup
  • 1 cup Fresh Cherries Dried cherries can be used as an alternative

For the Vinaigrette
  • 2 tablespoons Lemon Juice Fresh lime can be used in a pinch
  • 1 teaspoon Lemon Zest
  • 2 tablespoons White Wine Vinegar Apple cider vinegar is a suitable alternative
  • 1 tablespoon Fresh Oregano Can substitute with any favorite herbs
  • 1 tablespoon Mint Can substitute with any favorite herbs
  • 1 tablespoon Lemon Thyme Can substitute with any favorite herbs
  • 1/4 cup Extra Virgin Olive Oil
For Seasoning

Method
 

Step-by-Step Instructions
  1. Preheat your grill or grill pan to medium-high heat around 400°F (200°C). Allow it to heat for about 5–10 minutes.
  2. Slice the nectarines into eighths, removing the pit. Brush each slice with olive oil, then grill for 2–3 minutes until charred. Flip and grill for another 2–3 minutes.
  3. In a bowl, whisk together lemon juice, lemon zest, white wine vinegar, and minced fresh herbs. Gradually add olive oil, whisking until well blended.
  4. In a salad bowl, combine mixed greens, halved cherry and heirloom tomatoes, and fresh cherries. Drizzle with vinaigrette and toss gently to coat.
  5. Arrange grilled nectarines over the salad, tear burrata into pieces and nestle amongst the greens and prosciutto.
  6. Sprinkle with more herbs, black pepper, and finishing salt to taste. Serve with toasted baguette slices if desired.
