- Preheat your grill or grill pan to medium-high heat around 400°F (200°C). Allow it to heat for about 5–10 minutes.
- Slice the nectarines into eighths, removing the pit. Brush each slice with olive oil, then grill for 2–3 minutes until charred. Flip and grill for another 2–3 minutes.
- In a bowl, whisk together lemon juice, lemon zest, white wine vinegar, and minced fresh herbs. Gradually add olive oil, whisking until well blended.
- In a salad bowl, combine mixed greens, halved cherry and heirloom tomatoes, and fresh cherries. Drizzle with vinaigrette and toss gently to coat.
- Arrange grilled nectarines over the salad, tear burrata into pieces and nestle amongst the greens and prosciutto.
- Sprinkle with more herbs, black pepper, and finishing salt to taste. Serve with toasted baguette slices if desired.
