  • 2 tbsp Olive Oil Avocado oil offers a unique taste alternative.
  • 1 tbsp Balsamic Vinegar Lemon juice is a refreshing substitute if desired.

  • 1 cup Fresh Basil Leaves Oregano or parsley can make good garnish alternatives.

Method
 

Step-by-Step Instructions
  1. Prep the Grill: Preheat your grill or grill pan to medium-high heat, aiming for a temperature between 375°F and 450°F for optimal char marks.
  2. Prepare Vegetables: Wash and slice the zucchini, red bell pepper, and eggplant into even slices. Toss the sliced vegetables with olive oil, balsamic vinegar, salt, and pepper until well-coated.
  3. Grill Vegetables: Grill each side of the prepared vegetables for about 3-5 minutes, until tender and marked with nice char lines.
  4. Assemble Sandwiches: Spread pesto on one side of each slice of bread, layer grilled vegetables, and add mozzarella slices.
  5. Grill Sandwiches: Brush the outside of the assembled sandwiches with olive oil. Cook on the grill for 3-4 minutes on each side until golden brown and the cheese melts.
  6. Serve: Allow the sandwiches to rest for a minute, cut in half, and garnish with fresh basil leaves.
