- Prep the Grill: Preheat your grill or grill pan to medium-high heat, aiming for a temperature between 375°F and 450°F for optimal char marks.
- Prepare Vegetables: Wash and slice the zucchini, red bell pepper, and eggplant into even slices. Toss the sliced vegetables with olive oil, balsamic vinegar, salt, and pepper until well-coated.
- Grill Vegetables: Grill each side of the prepared vegetables for about 3-5 minutes, until tender and marked with nice char lines.
- Assemble Sandwiches: Spread pesto on one side of each slice of bread, layer grilled vegetables, and add mozzarella slices.
