Method
 

Step-by-Step Instructions
  1. Preheat your oven to 360°F (180°C) and line a baking sheet with parchment paper.
  2. Wash zucchinis and cut them in half lengthwise. Scoop out seeds and flesh.
  3. Heat olive oil in a skillet over medium heat, then sauté chopped onion for 5-7 minutes.
  4. Add ground beef to the skillet. Cook for 8-10 minutes until browned, draining excess grease.
  5. Stir in tomato paste, Italian seasoning, garlic powder, salt, and pepper. Mix well for about 2 minutes.
  6. Pour in the can of tomato sauce and simmer on medium-low heat for 15 minutes.
  7. Spoon the beef mixture into each hollowed zucchini half, packing it well.
  8. Top each zucchini with shredded mozzarella cheese and bake for 20 minutes until cheese is melted and golden.
