  • 1 cup Powdered Sugar or coconut sugar
  • 2 tablespoons Butter or Greek yogurt for a lighter option
  • 1 tablespoon Cream optional, to thin glaze

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together sugar, milk, oil, egg, and vanilla extract until smooth.
  3. In another bowl, sift together flour, baking powder, and salt. Mix well.
  4. Fold the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Gently fold in the diced peaches until evenly distributed in the batter.
  6. Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until golden and a toothpick comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Mix the powdered sugar, melted butter, diced peaches, and vanilla extract for the glaze. Add cream if needed to reach the desired consistency.
