Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until just combined.
  5. Gently fold the dry ingredients into the wet mixture until just incorporated.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet and press mini marshmallows on top.
  7. Bake for 10-12 minutes, adding an extra mini marshmallow halfway through the baking.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Drizzle with chocolate ganache.
