For the Dip
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour can substitute with gluten-free flour
  • 1 cup Blue Moon beer (or pale ale) can substitute with non-alcoholic beer or chicken broth + 1 tsp apple cider vinegar
  • 1 cup Milk any milk or plant-based milk works well
  • 2 cloves Garlic crushed, fresh is best
  • 1 tablespoon Worcestershire sauce optional
  • 1 tablespoon Dijon mustard can substitute with yellow mustard
  • 1 teaspoon Hot sauce adjust to taste
  • 1 teaspoon Onion powder can be omitted
Cheese Ingredients
  • 1 cup Colby Jack cheese shredded from block
  • 1 cup Sharp white cheddar cheese shredded from block
  • to taste Salt
  • to taste Pepper
For Serving
  • as needed Tortilla chips or pretzels for dipping

Method
 

Cooking Instructions
  1. In a medium saucepan over medium heat, melt the butter completely until bubbling.
  2. Whisk in the flour and cook for about 1 minute to form a roux.
  3. Gradually whisk in the beer and milk, stirring continuously, and allow to simmer for about 5 minutes until thickened.
  4. Stir in garlic, Worcestershire sauce, Dijon mustard, onion powder, and hot sauce, and mix well.
  5. Remove from heat and gradually stir in both cheeses until melted and smooth.
  6. Add salt and pepper to taste, stirring well to combine.
  7. Serve warm with tortilla chips or pretzels for dipping.
