- Preheat your oven to 375°F (190°C) and grease each cup of a mini muffin tin with butter or cooking spray.
- Roll out the thawed puff pastry on a floured surface to about ¼ inch thick and cut into 12 equal squares. Press each square into the muffin cups.
- Place a cube of brie in the center of each pastry cup.
- Spoon a dollop of cranberry sauce over the brie in each cup.
- If using, sprinkle candied pecans over the cranberry sauce.
- Bake for 15-18 minutes until the pastry is golden and puffed.
- Cool in the pan for 5 minutes and garnish with fresh rosemary sprigs before serving.
