- Preheat your oven to 400°F (200°C). Roast two medium sweet potatoes for about 45 minutes, then mash until smooth.
- In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, evaporated milk, melted butter, beaten eggs, ground cinnamon, ground nutmeg, and vanilla extract. Mix until silky.
- Fit the pie crust snugly into a pie dish and prick the bottom with a fork. Set aside.
- Pour the sweet potato filling into the prepared pie crust and smooth the top.
- Bake in the preheated oven at 350°F (175°C) for about 60 minutes, until the center jiggles slightly but is set.
- Allow the pie to cool at room temperature for at least an hour before slicing.
