Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until crumbly. Press into a greased baking dish.
  3. Bake crust for 8 minutes. Let it cool.
  4. In a large bowl, beat softened cream cheese until smooth. Add ricotta, powdered sugar, eggs, vanilla, zest, and cinnamon. Mix until smooth.
  5. Fold in mini chocolate chips gently.
  6. Pour filling over cooled crust. Bake for 35-40 minutes until slightly jiggly in the center.
  7. Cool at room temperature then refrigerate for at least 4 hours or overnight.
  8. Slice into bars, dust with powdered sugar, and sprinkle with crushed pistachios before serving.
